Jack and I love the beer cheese dip at Smoky Mountain Brewery. So, I googled the recipe and found one. It is pretty close. The flavor depends a lot on the beer you choose to use.
Ingredients
1/2 pound white American cheese (I like to use more to make it cheesier)
1/2 cup milk
1/2 cup beer (I use Guinness)
1/2 T dry mustard
1/2 T Worcestshire sauce
1/2 t Dijon mustard
1/4 t Tabasco sauce
Directions
Break the cheese up into small pieces. Add the cheese and milk to a double boiler.
Heat until creamy.
Mix the beer, Dijon, dry mustard, Worcestershire, and Tobasco in a bowl.
Once the cheese is melted, add the beer mixture.
Blend and serve with tortilla chips or pretzels.
