Taco Soup

As I mentioned in a previous post, Kaybe had made a taco soup for one of the UT games. I LOVED it and thought I would share it with everyone. It is extremely easy to make and feeds A LOT of people!



Ingredients:
2 lbs. ground beef
1 small onion
1 1/2 c water
1 can navy beans
1 can pinto beans w/ jalapenos
2 cans black beans
2 cans Rotel w/ green chilies
1 can whole kernel corn
2 pkgs taco seasoning
1 pkg Ranch Dressing Mix

Optional Toppings: Fritos / Tortilla chips, Cheese, Sour cream, etc

Directions:
Cut up your onion and add to your ground beef. Cook beef. Drain.



Add meat and onion to a pot (needs to be a good size pot.) add your water, beans, and rotel. (do NOT drain these). Drain your corn and add to the pot. Finally, add your taco seasoning and dressing mix. Simmer soup for about an hour or until hot.

 

Once the soup is done. You may add your favorite toppings. You may also eat it with Fritos like you would Chili or you can dip tortilla chips in your soup.
