Ranch Potato Salad

I was looking for a good recipe to take to Meghan and Nathan's house for the UT game. I found this recipe (Insightful Nana) and thought I would try it. I have never made potato salad before, and I am REALLY picky about the potato salad that I do eat. I thought the recipe looked interesting. So, I tried it. I changed it a little bit (original recipe makes for 20-25 people), but it still tasted great! I really liked it!

Ranch Potato Salad


Ingredients: 7 medium/large red potatoes, 2 stalks of celery, 1 small red onion, 1 T parsley, 6 Hard Boiled Eggs, 1 lb. bacon, dry Ranch Dressing Mix, 2 c mayonnaise, 1/4 C milk.Directions:

1. Wash and clean the potatoes. Cut them up and place them in water to boil. Boil until potatoes are tender.
2. Bring eggs to a boil. Boil for 10-15 minutes.
3. While potatoes and eggs are boiling, cut up bacon and fry it.
4. Once the potatoes are done, drain them, add salt (to taste) and let them cool completely.
5. Once eggs are done boiling, let them cool and peel them. Then cut them up in chunks. Add to cooled potatoes.
5. Cut up your celery and onion and add to cool potatoes.
6. Add bacon (Leave some out to sprinkle on top) to potatoes.
7. In a separate bowl, add mayo, milk, and ranch dressing mix. Then add to potatoes.
8. Add parsley.
9. Fold all the ingredients together. Be careful not to mash the potatoes.
10. If the salad is too dry, add a little bit of miracle whip.
11. Sprinkle the rest of the bacon and a little more parsley on top.
12. Enjoy
